This is similar recipe to cook the leftover rice form other meal,You can substitute any meat you want such as pork, beef, shrimp, ham, sausage, crab meat (other favorite fried rice dish in Thailand) or meatless whatever you want be, creative.
Ingredients
150 grams chicken breast, cut it to bite size pieces
2 cups cooked rice
2 eggs
Seasoning Ingredients

1 tbsp. fish sauce
2 tbsp. soy sauce
1 tsp. sugar
1 tsp. chicken broth mix powder (optional)

1 whole finely sliced green onion
1 whole finely sliced cilantro

Directions, Preheat a large frying pan over medium heat until it is hot. Add vegetable oil, when it is very hot and slightly smoking, add the garlic. When the garlic is browned add the chicken.
Turn the heat to moderate, stir-fry until the chicken is all cooked, move the chicken to the side, Break 2 eggs into a pan, add fish sauce whip briskly with a spatula.
Add all vegetables Stir well. When onion softened add the cooked rice, soy sauce, sugar, chicken broth mix powder. Continue to cook for 1 minute until all the ingredients mixed well.
Remove from the heat and put the contents of the pan into a plate. Garnish with green onion and cilantro.
