Thai stuffed Omelet (khai yud sai)


Ingredients
150 g. ground pork
1 tablespoon garlic cloves, smashed
3/4 cup sweet pepper, diced
3/4 cup onion,diced
3/4 cup carrot, diced
1/4 cup green onion,  finely sliced
1/4 cup cilantro, finely sliced

Seasoning ingredients
1 tsp. fish sauce
3 tbsp. ketchup
1 tbsp soy sauce
2 tbsp. oyster sauce
2 tsp. vinegar
2 tsp. sugar
2 tbsp. grapseed oil
2-3 large eggs

Directions for stuffed, Preheat 1 tbsp. oil in a pan on medium heat. Add garlic and keep stirring until its golden brown. Add ground pork and cook over moderately high heat. Keep stir fry until the ground pork is no pink.
Add sweet pepper, onion and carrot. Stir briely, seasoning with fish sauce, vinegar, ketchup, soy   sauce, oyster sauce and sugar. Stir fry until all the ingredients mix thoroughly.
Remove from the heat, add sliced cilantro, sliced green onion, Stir lightly. Set aside.





 

How to make omelet wrapper, Pan is properly preheated. Break 1 egg into a small bowl and whip briskly with a fork, pour into preheated pan, distribute the egg evenly thorough the pan.
Cook the omelet about 1 minute or until the bottom of omelet is firm and lightly browned. Remove it into a plate.
Place stuffing in the middle of the omelet wrapper, fold all 4 sides to cover the stuffing.
Cover this plate with another plate of the same size and turn it up side down. Cut on top of the wrapper carfully show stuffing. Garnish with cilantro leaf.

 

 
 
 
I recommended another easy way to present the stuffed omelet. 
After remove fried omelet wrapper from the pan. Place stuffing full on half side of the omelet wrapper, fold it to be a semicircle. Garnish with cilantro leaf.
 
The ingredients is for 3 servings
 
Tip, Use medium heat and just cover the oil on a pan to cook the egg otherwise it will burn too fast and gets too brown, I didn't flip it over, Only cook on one side as well.
