Ingredients
10 Thai green or red chilies, Add more or less, Depending on the level of spice you prefer.
2 green Serrano pepper, sliced
1 tsp. of coriander seeds
1 tsp. ground pepper
1 tsp. ground cumin
4-5 garlic cloves, peeled
2 shallots, peeled and cut into chunks
1 inch piece of galangal, cut into chunks
1 whole lemongrass thinly sliced
1/4 cup caned coconut milk
1/2 tbsp. grated lime peel (optional)
Directions, Place all ingredients in a food processor or blender and process to a chunky paste.
The quantities above make about 1 cup of curry paste, its perfect for one cooked meal.
