Thai stuffed Omelet (khai yud sai)


Ingredients
150 g. ground pork
1 tablespoon garlic cloves, smashed
3/4 cup sweet pepper, diced
3/4 cup onion,diced
3/4 cup carrot, diced
1/4 cup green onion,  finely sliced
1/4 cup cilantro, finely sliced

Seasoning ingredients
1 tsp. fish sauce
3 tbsp. ketchup
1 tbsp soy sauce
2 tbsp. oyster sauce
2 tsp. vinegar
2 tsp. sugar
2 tbsp. grapseed oil
2-3 large eggs

Directions for stuffed, Preheat 1 tbsp. oil in a pan on medium heat. Add garlic and keep stirring until its golden brown. Add ground pork and cook over moderately high heat. Keep stir fry until the ground pork is no pink.
Add sweet pepper, onion and carrot. Stir briely, seasoning with fish sauce, vinegar, ketchup, soy   sauce, oyster sauce and sugar. Stir fry until all the ingredients mix thoroughly.
Remove from the heat, add sliced cilantro, sliced green onion, Stir lightly. Set aside.





 

How to make omelet wrapper, Pan is properly preheated. Break 1 egg into a small bowl and whip briskly with a fork, pour into preheated pan, distribute the egg evenly thorough the pan.
Cook the omelet about 1 minute or until the bottom of omelet is firm and lightly browned. Remove it into a plate.
Place stuffing in the middle of the omelet wrapper, fold all 4 sides to cover the stuffing.
Cover this plate with another plate of the same size and turn it up side down. Cut on top of the wrapper carfully show stuffing. Garnish with cilantro leaf.

 

 
 
 
I recommended another easy way to present the stuffed omelet. 
After remove fried omelet wrapper from the pan. Place stuffing full on half side of the omelet wrapper, fold it to be a semicircle. Garnish with cilantro leaf.
 
The ingredients is for 3 servings
 
Tip, Use medium heat and just cover the oil on a pan to cook the egg otherwise it will burn too fast and gets too brown, I didn't flip it over, Only cook on one side as well.
 

Grilled chicken with glass noodles Salad (yum woon-san kai yang)



ingredients
100 gram grilled chicken,cut into bite size pieces
1/4 cup thinly sliced onion
1/4 cup thinly sliced sweet pepper
1/2 cup finely sliced chines celery
1-2 thinly sliced Thai chili's
20 grams glass noodles,soak in room temperature water until soft

 

Seasoning sauce ingredients
3 teaspoons fresh lime juice
1 teaspoon  sugar
2 teaspoons fish sauce

Prepare the seasoning sauce,In a small bowl combine lime juice,sugar and fish sauce,Stir well until the sugar dissolves.


Soak glass noodles in room temperature water until soft,Remove from water and cut into 1 inch.


 In a boiling pot prepare 1 cup of water over medium heat,add glass noodles boil it for about 30 seconds.


Remove from the heat let it drain.



In a mixing bowl combine,grilled chicken,onion,sweet pepper,celery,chilies,glass noodles and slowly pouring seasoning sauce into mixing bowl then mix well.

Minced chicken meal salad (laap kai)

 
 
 
This is delicious versions of "Laab" is popular in the northeast of Thailand, Isaan food usually has hot and spicy flavors, This dish can be good for an appetizer or eaten with rice, I recommend eating it with sticky rice and wrapped in Boston lettuce leaves, This time around I wrapped it in Chinese lettuce leaves.
 
Ingredients
350 grams chicken breast, minced
1 tsp. vegetable oil
1 tbsp. oyster sauce
1-2 Thai chilies, thinly sliced 
Or 1 tsp. chili flakes
1/2 cup cilantro, thinly sliced
1/2 cup green onion, thinly sliced
1/4 cup red onion, thinly sliced
1 tbsp. toasted rice
10 lettuce leaves
 
Seasoning sauce ingredients
3 tbsp. fresh lime juice
1 tbsp. plus 1 teaspoon sugar
1 1/2 tbsp. fish sauce
 
Prepare the seasoning sauce, In a small bowl combine lime juice, sugar, fish sauce, Stir well until the sugar dissolves.

Directions, Heat vegetable oil in a pan. Add minced chicken cook and over moderately high heat.
Add oyster sauce, Beaking up the meat finely, until no pink remains about 3 minutes.
Put into a large bowl.
Mix stir fried chicken, Thai chilies, green onion, red onion, cilantro, toasted rice and pour seasoning sauce, Mix its concisely. Spoon into lettuce leaves.

Fried chicken with garlic and pepper (Kai Thod Krathiem prik Thai)

Marinade Ingredients
1/2 teaspoon black pepper smashed
1 tablespoon soy sauce
1 tablespoon sriracha chili sauce
1 teaspoon chicken broth mix powder
1 tablespoon liquid honey
1 teaspoon garlic, minced
1 tablespoon starch
Ingredients
350 grams chicken breast, cut into bite-size pieces
1/4 cup vegetable oil
1 whole coriander leave (for garnish)
1 tablespoon garlic cloves, smashed

Directions
In a small mixing bowl place all the marinade ingredients, along with chicken breast, Then mix well, Soak it more then 15 minutes or overnight.
Add corn starch, mix well before you place into a hot pan.
Heat a pan on medium heat add cooking oil, When it's hot, Add the garlic and keep stirring until golden brown, Separate half of it onto plate for garnish.
Place the marinaded chicken in a hot pan, Turn up the heat over moderate cook until done or turns to brown about 2 minutes.
Drain the oil on paper tower and transfer to a plate, Garnish with fried garlic and cilantro.

Thai crispy pork belly (moo krob)


Ingredients.
350 grams pork belly
1 teaspoon salt
3 tablespoons vinegar
3-4 cups water
 2 cups vegetable oil



Directions.
On medium heat boil 2-3 cups of water in a pot add vinegar and salt when it is boiling add pork belly keep boiling about 20 minutes,


Remove from the water,Place on gridiron



Prick all the Pisces of pork with fork, Brush well with vinegar and salt, Lt its cool down and dry completely for 2-3 hrs.


Preheat the vegetable oil in deep fryer pot on medium high,Make sure it is very hot before adding the pork,


Use a lid to cover the pot,Hot oil will spurt out when you add the pork, Deep fry still golden browned and crispy both side.



Drain on paper toweling.
